At La Table de Pavie, Yannick Alléno has been composing bold culinary poetry for several years now. Here, this three-star Michelin chef draws inspiration from traditional Bordeaux recipes, reinterpreting and modernizing them to revive the region’s gastronomic heritage with such dishes as garbure, lamprey, eels, oysters and crépinettes, grattons bordelais, garlic tourin and strawberry soup.


Wine, along with the vine, provides the common thread on his menu. Beyond creating outstanding food and wine pairings, the Chef allows grape varieties to guide the creation of his dishes. His sensory journey also draws on “Modern Cuisine”, a movement he initiated in 2013 comprising the reinvention of sauces, reductions, extractions and fermentations and allowing produce to express itself fully.


Accompanied by executive chef Sébastien Faramond and pastry chef Sébastien Nabaile, Yannick Alléno selects his ingredients from committed and loyal Aquitaine producers that combine savoir-faire and respect. La Table de Pavie thus continues to deliver great Bordeaux cuisine in the service of outstanding wines.

The epicurean spirit

Nestled in the heart of Saint-Émilion village, L’Envers du Décor has become the must-visit venue for wine lovers.


As you step in, this bistro and wine bar immediately charms with its atypical setting. Featuring a characterful fireplace, a welcoming counter and a shaded enclosed garden, it offers the perfect gourmet interlude. Chef Bertrand Bordenave designs his menu according to the seasons, highlighting the flagship ingredients of the Bordeaux terroir, carefully selected with priority given to local producers.


Enjoy flavoursome, convivial market cuisine built around the establishment’s signature dishes, such as lamb shoulder or Grand Marnier soufflé. The wine list fully lives up to expectations with more than 500 references. While waiting to delight the palate, these bottles rest peacefully in the calm of a former stone quarry cut out in the 19th century beneath the restaurant.

A taste of the dolce vita

In this restaurant, located at the foot of the bell tower of the magnificent monolithic church of Saint-Émilion, Italy sets the tone—a heartfelt choice by Gérard Perse, who was particularly fond of the Boot, the generosity of its lifestyle and the finesse of its products.


Its sunny influence is reflected everywhere, starting with the menu. Each dish follows the same philosophy of top-quality ingredients in the service of iconic Italian dishes. Epicureans can choose from classic and original pizzas, pasta, salads and fine cured meats. Those with a sweet tooth are equally indulged with unctuous ice creams, yummy tiramisu and smooth panna cotta.


The sun also shines bright in the glass with a fine selection of Italian bottles, plus wines from our estates and other cuvées from the region. Whether inside in the restaurant’s charming dining room or outside on the magnificent, spacious terrace, this is undeniably a delightful place to linger over lunch, enjoy an afternoon ice cream or have a drink at the end of the day.

Le Glacier des Vignobles

Le Glacier des Vignobles offers visitors a delightful gourmet break. Sébastien Nabaile, former pastry chef of La Table de Pavie **, includes some of his finest creations here. Ice creams and sorbets are produced daily in accordance with artisanal traditions, using high-quality ingredients.


Guests can find not only the classic flavours of vanilla, coffee and chocolate, but also such original creations as Zebra Tomato, Feijoa, Olive Oil, or Bourru (the local name for grape-must during fermentation). The more indulgent guests can enjoy more playful flavours such as M&Ms, Oreo, or Harlequin sweets.


Le Glacier des Vignobles also offers biscuits, pastries, bread, and viennoiseries, all made on site by a passionate team. A nostalgic and indulgent tasting experience to be enjoyed while strolling through Saint-Émilion’s cobbled streets.


Finally, Le Glacier des Vignobles offers both breakfast and lunch menus, made up of a selection of sandwiches, bagels, salads or focaccias, that vary from day to day.
